Mixed Berry & Apple Pie

This pie is amazing. And I'm not just saying that cause I made it. The combination of the mixed berries and the apple is divine - especially hot from the oven!

The recipe is originally from Martha Stewart but I feel she often makes things a little more complicated than they need to be. So I adjusted it and also added my mom's pie crust recipe. :)

PASTRY (makes enough for a pie base and top cover)
2 cups flour - sift into bowl
2 tsp baking powder (omit if you are using self-rising flour)
1 Tablespoon sugar
1/2 tsp salt
1/3 cup solid Crisco (not the oil in the bottle)
1/3 cup butter
4-5 Tablespoons ice cold water

Sift the flour, baking powder, sugar and salt into bowl.
Add the Crisco and butter (or 2/3 cup butter or 2/3 cup Crisco if you are out of one of them) and rub into the flour with your fingers until all blended.
Add the ice water.

You can also do this in the food processor. Put the dry ingredients in and add the Crisco/butter. Pulse till they are blended, then add the ice water through the funnel while you pulse.

Split into two balls - one for pie base and one for the cover. Make sure to have lots of flour on the board and rolling pin when rolling.

PIE
1/4 cup plus 2 Tablespoons granulated sugar
2 Tablespoons cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large granny smith apple, peeled and sliced into very thin slices
3 cups of mixed berries (I used a bag of frozen berries, defrosted)
1 ounce (2 Tablespoons) cold unsalted butter cut into small pieces

Preheat oven to 375.
Whisk together sugar, cornstarch, cinnamon and salt in a large bowl. Add apple slices and berries and toss to coat. Pour filling into piecrust. Dot the filling with the cut up butter. Place top of pie crust over the mixture. (I like to do strips cause it looks pretty). Sprinkle a little more sugar over the top.
Bake for 35-40 minutes until brown.

This is some excellent lattice work. Have you ever done a crumble? I would imagine so with your British roots...I've grown a taste for rhubarb crumble in my time here. :) But berry and apple would also be amazing.

mmmm pie...pie....pie....pie...why do I read these things at 1 AM when I have no pie ingredients, not to mention it would put me in the "crazy-ish" category if I started one right now anyway!

Alisha, I love crumble! Especially rhubarb but it's so expensive here, I usually just do an apple crumble. Crumble with hot runny custard... Yum!

Colby - I think pie baking at 1am sounds awesome! Especially since 1am your time is only 8pm Hawaii time! :)
